Dining with Diabetes

According to the Mayo Clinic, a diabetes diet is a healthy eating plan that helps you manage your blood sugar levels. It starts with being intentional about what you put in your body and focusing on plant-based nutrition.

A great example of the website’s plant-based focus is their pumpkin burger.  While you may pay more for plant-based burgers in the grocery store, this recipe offers a taste of fall that can be made at home in bulk with the leftovers frozen for quick meals in the future.  The key ingredients—pumpkin, beans, zucchini, and flax seed—all have beneficial effects for maintaining blood glucose levels.

Ingredients

  • 1 cup white navy beans, cooked
  • 2/3 cup pureed pumpkin
  • 1 cup red onion, chopped
  • 1 cup yellow bell pepper, chopped
  • 1 cup zucchini, chopped
  • 4 garlic cloves, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1 1/3 tablespoon tomato paste
  • 1/3 cup ground flax seeds

Instructions

Preheat your oven to 400 degrees and line a baking sheet with parchment paper

In a food processor, add the beans, pumpkin, onion, bell pepper, zucchini and garlic. Blend until smooth.

Transfer your mixture to a large mixing bowl and add the remaining ingredients. Stir well to form a thick batter.  Transfer to the refrigerator and let it cool and thicken for 15 minutes.

Form the mixture into patties and place on the lined baking sheet. If the mixture is too wet to hold a patty shape, add more flax seeds. Bake for 40 minutes, flipping the patties halfway through.

Patties can be enjoyed on a whole-wheat bun, wrapped in lettuce, or in a salad.
